If Valpolicella was the “Buen Retiro” of the Roman Nobles already more than 2000 years ago, the real reasons are: the always temperate climate, the fresh winds that come from the Alps, and not least the proximity of Lake Garda. All these Factors plus a drying technology created by the Noble Romans themselves, give Valpolicella Wines the flavor of fruits such as cherry in all its forms from fresh fruit, to jam to cherries in alcohol; red berries, all reinforced by Tannins and hints of Vanilla, slightly aged tobacco and chocolate notes, conferred by the precious Limousin or Allier oak wood of French origin.
